Nonna’s Cartellate
Rossella Rago, the host and co-creator of the vastly popular, “Cooking With Nonna” show, has graciously shared this recipe and video for her family’s Cartellate recipe, which is very traditional in the Puglia region of Italy where her family originates from. For this recipe, Rossella is accompanied by her very own Nonna Romana!
Cartellate are deep-fried, crispy Italian pastry that are also sometimes known as “honey fritters” because sometimes they are drizzled with honey. This recipe will make enough for 50 Cartellate.
Cartellate Ingredients
2 Lbs – Flour
1 3/4 Cups – Dry white wine
1/2 Cup – Olive oil
2 Cups – Vin Cotto (made from figs) or Honey
Cinnamon powder
Olive oil for frying

Thank you! I think it would be best to make the cookies and then freeze half, rather than to freeze the dough. That’s what I always do. But you could also just half the recipe.
